Bitto DOP is a mountain cheese from Lombardy's Bitto Valley, made from fresh whole milk with a possible addition of up to 10% goat milk, aged for a minimum of 70 days but capable of maturing for up to a decade while maintaining its delicate, sweet flavor and developing a more intense, slightly spicy profile.
